Most "extra virgin" on Australian shelves is a blend of oils from a dozen countries, pressed months before it reaches a shelf. We do the opposite.
The Difference
01Single estate, every bottle. Never blended across growers or regions — you always know exactly whose grove it came from.
02Crush-dated, not just "best before." The day the olives were pressed is printed on the label, the same way a vintage is on wine.
03One drop a year. Shipped in the weeks after the Feb–Apr harvest, while the oil is at its peak — then the release closes until next season.
